Girls Will Cook/The Art of Fall: Caramel Popcorn

I hope you enjoy this recipe for caramel popcorn just as much as I do. It's easy to make and super yummy to eat. The directions should be easy to understand because it ties in with the Girls Will Cook series, and through that series you can find easy recipes. Caramel Popcorn

Makes 20 servings


Ingredients:
  • 1 cup butter
  • 2 cups brown sugar
  • 1/2 cup corn syrup
  • 1 teaspoon salt 
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract 
  • 20 cups popped popcorn  
Directions: 

Preheat the oven to 250 degrees F. Place popped popcorn in a large bowl.

In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove the pot from heat and stir in baking soda and vanilla. Pour a thin stream of the caramel mixture over popcorn, stir to coat the popcorn.

Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.
